Enchilada lasagna



My family has always eaten enchiladas lasagna style. So much so that I thought everyone ate enchiladas this way. When I started going out to eat with my husband and his family, I found out I was completely wrong. It's still my favorite way to make them though. Here's how I do it.


Ingredients:
+ A pack of corn tortillas
+ A can of red enchilada sauce 
(I don't remember the brand, sorry!)
+  2 chicken breast.
+ Monterey jack cheese.
+ Small bushel of cilantro.
+ Oil for frying

Start by boiling the chicken until tender. While the chicken is cooling, shred as much cheese as you'd like, we use a lot because hubbs loves cheese. Once the chicken is cool, shred into itty bitty pieces. Add cilantro and 1/4 cup of the enchilada sauce. Allow the chicken to marinate a tad while you lightly fry the tortillas in a small amount of oil. Layer tortillas, chicken, sauce, cheese and repeat. Make sure the finish with the cheese. Pop it into the oven for 30 mins or until the cheese on top looks bubbly and delish and enjoy!

  3. That looks so delicious! I'm totally gonna cook that soon, but with ground beef cause we have so much ground beef that we need to get rid of. :)
